Dips are great for entertaining but they're also super easy to make at home! This whipped feta dip is a case in point: everything is put into a food processor and it's made in a couple of minutes!
The best bread pairing for this is the souvlaki bread that I've become rather obsessed with lately. I love Greek dips with bread and souvlaki bread is spongey, soft and heats up so easily. It's not easy to find as a retail customer though. I should add that Greek people do make special trips to buy this bread and that I'm not the only obsessive person out there.
I had tried to buy this bread from a deli in Maroubra where I had first seen them a couple of months before. But because it was the end of the Easter weekend they were all sold out and I left without my precious souvlaki breads.

I rang the supplier a few days later after Easter and they told me that there were only two retailers: a souvlaki place in Marrickville and the Maroubra deli. I tried calling the deli but their phone didn't work so I facebook messaged them to see if they had them in stock. "Yes we do but hurry as it sells out fast," they said. I was busy but didn't want to miss out again so I hightailed it over there leaving a trail of destruction and half completed tasks in my wake. And of course you can probably guess what I saw when I got there.
It was stacks and stacks of this souvlaki bread, around 30 or 40 in total. I grabbed two bags, just in case and paid my $2 for each packet of 10 breads (you can probably see why they sell so well!). And for the next week we enjoyed these souvlaki breads with everything-with stews, as wraps and as pizza bases. And with a big tub of this dip!

Preparation time: 10 minutes
Cooking time: 0 minutes
Step 1 - Place the feta, sour cream, mayonnaise, garlic, lemon juice and mint in a food processor and blend until mixture is smooth. Add cayenne pepper to taste.

Step 2 - Top with diced cherry tomatoes and chopped chives and serve with warm souvlaki bread.
